Chinese Sweet & Sour Chicken

This is one of the most popular Chinese takeaway dishes. Now you too can make this dish at home. This is my version of the Chinese sweet & sour chicken, but in my recipe I won’t be frying my chicken in oil, but I will air fry my chicken until crispy and juicy, using one teaspoon of oil. In this recipe I’m not going to use eggs to coat my chicken before dipping my chicken to the flour mix. My sweet and sour sauce is sweet and tangy but I still added the heat to my sauce by adding fresh chillies and of course the Kashmiri chilli powder for the colour. This recipe is a colourful dish with red, green peppers and added carrots. Serve your sweet and sour chicken with basmati rice. You absolutely will love it. You’ll definitely make this easy recipe again.

Chilli Masala Prawns

This is my very own unique recipe, using my homemade masala powder, that I have created. Chilli masala prawns are very popular in India. I have used raw tiger prawns for this dish. If you love prawns and you are looking for that delicious prawn recipe, spicy and dry, but full of flavour, then this recipe is it. The red colour of the prawns is due to the Kashmiri chilli powder that I have used. It looks hot but it isn’t, it’s very mild. If you like it spicy then add chilli powder to it. I have added fresh green and red chillies as I love the heat. You can enjoy these prawns with rice, naan bread or even on its own with a cool refreshing drink. The choice is yours. Let me show you how it is made.

Thai Green Curry

I am going to show you my version of the classic homemade Thai Green Curry. This recipe is made with chicken and green mixed vegetables. You can use prawns, pork, beef or just use vegetables if you are a vegetarian. I have used coconut milk, Thai basil leaves, Kaffir leaves, fresh coriander leaves and fresh green chillies making my Thai curry creamy, spicy and aromatic. This is one of the most popular curries in Thailand and in restaurants around the world. Now you can make it in the comfort of your home. I have served my Thai curry with jasmine rice and pickled carrot and cucumber. You could, of course, serve it with rice noodles too. If you don’t want your chicken looking green, then my tip is to cook your chicken first and add the chicken curry before serving it on your plate. Your chicken will look white. I have used a lot of green chillies, basil and coriander making my chicken look light pastel green. The chicken was absolutely delicious and so moist. This is a must try recipe.

Garlic & Coriander Naan Bread

I am going to show you how to make an easy naan bread. A naan bread is a traditional Indian flat bread usually made in a tandoor (clay oven) it is then served with a curry of your choice. This is my version of a homemade garlic & coriander naan bread and the best thing about this naan bread is that it is oven baked. My naan bread is crispy on the outside but so soft bread-like in the inside. I have added olive oil, butter, garlic and coriander drizzled over the naan bread. This recipe is as good as a restaurant style naan bread, but made using an oven. Try it for yourself and see. You’ll thank me later ;-)

Zingi Air Fryer Fried Chicken

I must admit that I was apprehensive about frying my chicken in an Air Fryer with only one teaspoon of oil, but oh my god, I'm a believer now. This is my own recipe, and the chicken came out crispy, golden, and crunchy on the outside and moist, juicy on the inside, just like it had been fried. The chicken was cooked in a flash. The chicken test has been passed with flying colours by the Air fryer! I didn't use an egg mixture to double dip these because my seasoning in the flour was already well seasoned. Simply wash your chicken and marinate it in 1 teaspoon of vinegar and half of a lemon's juice for an hour and a half. Your chicken will have an extra-fresh flavour. Try it out and see what happens.
