Pesto Pasta
This is my simple Italian pesto pasta recipe; it's quick and easy to make. For this dish, I used my homemade sun dried pesto. If you want to learn how to create your own pesto, read the instruction below, but you can also use store-bought pesto from a jar. But, if you create your own pesto, I have to admit there's something special about it. Try it out and see what happens. This recipe is easy to make and delicious.
Ingredients
Serves 4-5
1kg pasta shells
150g tomato pesto homemade or shop bought
150g tomato passata
1/2 red pepper
1/2 yellow pepper
1/2 courgette
80g mushrooms
1/2 aubergine
1 large brown onion
1 large red onion
1 large tomato chopped
6 garlic chopped
Handful of basil
1 teaspoon chilli flakes
1/2 teaspoon black pepper
1 teaspoon salt
2 mozzarella balls
150g cheddar cheese
80g parmigiano cheese
1 teaspoon chilli powder
1 teaspoon oregano herb
1 teaspoon parsley
2 tablespoons olive oil
Method
1. Heat up your pan and pour about 2 tablespoons of olive oil and add the onions and garlic and sauté until golden brown.
2. Now add all thevegetables and tomatoes and allow it to cook.
3. Add all the spices and give it a stir, now add the pesto and tomato passata stirring it time to time. Let it cook for about 15 minutes at low heat covered with a lid.
4. Now add the cooked pasta and give this a stir, add the basil in.
5. Once all mixed together, put your pasta into a oven dish making sure the cheese is layered with the pasta.
6. Finally add some more cheese on top and cover with foil and oven bake for 25 minutes at 160C.
7. Remove foil 15 minutes later just to grill the cheese topping.
8. Serve with garlic bread and a fresh salad.

250g sun dried tomato
50g cashew nuts
30g almonds
50g pine nuts
Handful basil leaves
40g Parmesan cheese
3 cloves garlic
1/2 teaspoon salt
160ml olive oil
