Singaporean Noodles
This is an authentic Singapore noodles recipe. It’s very easy to make, using fresh stir fry vegetables, Char Sui pork, prawns chicken and egg. This recipe has so much flavour as I have used my own curry masala. Singaporeans use Indian flavours with Chinese rice noodles and so cook the noodles with curry powder. I have given you a step by step guide to make the Singapore noodles. Please try it and enjoy.
Ingredients
Serves 4-5
5 garlic cloves
2 tablespoons fresh ginger
3 fresh green chillies
1 brown onion
1 red onion
4 shallots
Rice noodles
Selection of stir fry vegetables of your choice
3 chicken breast meat
1 tablespoon Shaoxing wine
I teaspoon soy sauce
1/2 black pepper
1/2 Chinese five spice powder
250 raw king prawns
1/2 teaspoon white pepper
1 tablespoon cornflour
1/2 onion powder
1/2 teaspoon turmeric powder
1 tablespoon Rosie’s curry masala powder
1/2 teaspoon salt (optional as soy sauce has salt in it)
150g Char Siu pork (my recipe of the Char Siu pork is on my YouTube channel)
2 spring onions chopped
1-2 eggs
Hot boiling water for the noodles.
Method
1. Add Shaoxing wine, soy sauce, black pepper and Chinese five to the chicken and set aside for 15 minutes.
2. Add white pepper, corn flour and onion powder to the raw prawns add a little soy sauce and set aside.
3. Beat the eggs and add salt and pepper and beat the eggs again.
4. Boil water and pour over your noodles cover and set aside for about 3 to 4. This will cook the noodles. Do not over cook the noodles. Then drain the water using a colander. Set aside the noodles until you need it later.
5. In a hot wok or pan pour some oil and pour the beaten eggs and lightly scramble your eggs; do not over cook. Once the eggs have been cooked set aside into a clean bowl.
6. Pour a little more oil into your wok and fry the onions and then add the stir fry vegetables cook and set aside on a plate.
7. Pour a little oil into your wok and add the chicken and stir fry until cook through set aside.
8. Do the same with the prawns; cook until done but do not over cook the prawns.
9. Then clean your wok and pour some oil add the garlic and ginger, stir fry until golden brown add the fresh chillies and my curry masala powder.
10. Add the noodles making sure all the water has drained away from the noodles leaving it nice and dry.
11. Stir fry the noodles with the curry masala mixture until well coated.
12. Now add the vegetables, scrambled eggs, chicken, prawns, Char Siu pork and a little salt and mix well, be very gentle when stirring finally add a little soy sauce and stir again until well mixed in.
13. Garnish with fresh spring onions and serve. Enjoy, please visit me again x
