Baked Fish Masala
This is my delicious crispy, baked masala fish recipe. It is extremely easy to make, using simple spices and will bake in the oven in just 45 minutes. You can use any fish you like. Just marinate over night or for two hours, if you are in a hurry, and just bake. I served my fish with chips and potatoes two separate meals.
Ingredients
Serves 4-5
1kg Tilapia or king fish
1 cup ginger and garlic paste with red chillies (chillies are optional)
1 teaspoon black pepper
1 teaspoon coriander powder
1 teaspoon chilli powder
1 teaspoon Kashmiri powder
1/2 teaspoon turmeric powder
1/2 teaspoon white pepper powder
1 tablespoon cooking oil
1/2 fresh lemon juice
Salt to taste
1 tablespoon Rosie’s masala (homemade)
Handful of curry leaves
Handful of fresh coriander leaves
Method
1. Prepare the fish, wash and cut some slits on the sides of the fish and set aside.
2. Put all the spices, ginger and garlic red chilli paste, oil, lemon juice, fresh coriander leaves and curry leave and mix well.
3. Put the fish in and coat well and leave in the fridge over night or for just 2 hours.
4. Once marinated take out of the fridge and place on a foil lined baking tray with a little oil.
5. Place your fish cover with foil and oven bake.
6. Turn you fish over halfway and then remove the top foil and bake again until crispy. Bake at 160C for about 45 minutes or until crispy. Serve with home chips and a dip of your choice. Enjoy!
