Chicken Katsu Curry

This is my version of the Japanese Chicken Katsu Curry. This recipe is so easy and so delicious. I will teach you all the best tips and tricks from making a smooth Katsu curry to breading your chicken and frying the chicken until crispy, moist and tender. This recipe is one of easiest to make at home. It is the closest to Wagamama's famous Chicken Katsu. Forget about ready made sauces from jars and packets, now you can make it for yourself.

Ingredients

4 chicken breast meat

2 large onions chopped

1-2 fresh chilli

1 tablespoon ginger

1 tablespoon garlic

100ml thick coconut cream

250ml chicken stock

1 teaspoon dark soy sauce

1/2 teaspoon turmeric

1 teaspoon sugar

1/2 teaspoon chilli powder

1 tablespoon Rosie’s curry masala powder

1 tablespoon plain flour

2 eggs

200g plain seasoned flour

250g breadcrumbs of your choice golden bread crumbs or Panko breadcrumbs

100g butter

2 tablespoons of cooking oil

Method

1. Heat up your wok or pan and pour oil and butter. The butter will give you a rich creamy taste.

2. Now add the onions and sauté until golden brown, add the garlic ginger and fresh chillies.

3. Now add all the spices and stir together until the rawness of the spices disappear. Pour your stock a little at a time, be careful at this point do not add too much keep stirring.

4. Add the thick coconut milk, keep stirring. This recipe has no salt instead I’m using dark soy sauce which is salty. So please do not add any salt to the Katsu curry sauce.

5. It is time to breadcrumb the chicken and set aside in the fridge for about 15 minutes.

6. We are now going back to the Katsu curry sauce, pour the Katsu curry into a blender and blend until smooth and creamy.

7. Pour the blended Katsu curry back into your wok or pan and let it simmer.

8. Meanwhile start shallow frying your breadcrumbed chicken breast meat. Keep turning the chicken until cooked through.

Time to serve up your plate, making sure it is beautifully presented. Slice up your chicken and pour the Katsu curry over your juicy chicken and serve with rice and vegetables of your choice. Enjoy :-)
