Chilli Masala Prawns

This is my very own unique recipe, using my homemade masala powder, that I have created. Chilli masala prawns are very popular in India. I have used raw tiger prawns for this dish. If you love prawns and you are looking for that delicious prawn recipe, spicy and dry, but full of flavour, then this recipe is it. The red colour of the prawns is due to the Kashmiri chilli powder that I have used. It looks hot but it isn’t, it’s very mild. If you like it spicy then add chilli powder to it. I have added fresh green and red chillies as I love the heat. You can enjoy these prawns with rice, naan bread or even on its own with a cool refreshing drink. The choice is yours. Let me show you how it is made.

Chilli Masala Prawns

Ingredients

Serves 4-5

1kg 18 raw tiger prawns

For the prawn marinade

1 tablespoon fresh ginger

1 1/2 red onion

4 fresh chillies

5 cloves of garlic

1 tablespoon coriander powder

1/2 teaspoon cumin powder

1 teaspoon chilli powder

1 large tablespoon deep red Kashmiri powder for colour (mild)

1 teaspoon white pepper

1 teaspoon black pepper

1 teaspoon fenugreek leaves crushed

I tablespoon soy sauce

Salt to taste

1 tablespoon Rosie’s spice masala

1 teaspoon turmeric

1/2 lime

30ml water

Some cooking oil

25g butter

3 medium onions

4 garlic

Fresh red and green chillies (optional)

Fresh curry leaves to garnish at the end

Method

1. This recipe is very simple, clean the prawns, take off the shell and devein. It’s easier to use a kitchen scissors for this process.

2. In a grinder machine add the ginger, garlic onion, chillies with a little water and grind well to a purée paste.

3. Once done add your mixture to the prawns.

4. Now add the spices, soy sauce and squeeze half a lime juice and mix well until the prawns are well coated. Leave over night to marinate.

5. In a frying pan add some oil and fry the prawns until cooked through,then set aside. (Do not over cook your prawns otherwise with turn rubbery).

6. In a wok or a pan add some oil. Once the oil is hot add the ginger, a little butter, garlic and onion and fry until golden brown.

7. Now add the cooked tiger prawns with the caramelised mixture; cook together until everything is mixed well. Serve immediately with rice, naan bread. This prawns recipe is truly delicious, you got to try it to believe it. :-)
