Sicilian Lemon Cupcakes
Here's how to make luscious, fluffy, and soft Sicilian lemon cupcakes with flavourful chocolate chips using my recipe. This recipe serves 12 people, ensuring that everyone gets a taste of the unique flavour. These delectable cupcakes are simple to make and may be served at any time.
Ingredients
250g self-raising flour
1 lemon rind
70g caster sugar
1/2 teaspoon baking powder
80g melted butter
3 large eggs
150g white chocolate
200mls milk
Method
1. This recipe is so simple put all your ingredients into a bowl and mix until all the ingredients formed into a cake batter.
2. Line your cupcake tray and fill half way and then oven bake for 25 minutes at 160C until well done.
3. Once cooled down you can ice your cupcakes or have them without the icing.
Icing
200g icing sugar
1/2 lemon juice and lemon rind
100g unsalted butter
