The sponge of these cupcakes are similar to a scone's crumbly consistency but they melt in the mouth, they are so soft with that vanilla taste. I have gone for a light vanilla buttercream frosting topped with a caramel sauce drizzle and half a cookie for decoration, but you can have any type of decoration you desire.

Red Velvet Cupcakes

This is my red velvet cupcakes recipe with vanilla buttercream frosting. Normally the frosting would be made with a cream cheese. I prefer the vanilla buttercream and it goes very well with the red velvet cupcakes. These red velvet cupcakes are certainly impressive, delicious and super moist with that vibrant red colour. Just make sure you buy the quality red food colouring and don’t go for the cheap one. I have decorated my cupcakes with fresh strawberries and red velvet cake crumbs. You can of course use any cake decorations you like.

This is an easy apple crumble. Traditionally, apple crumble is made with Bramley cooking apples; these apples are very sour to eat and you will need a lot of sugar to sweeten the apples for cooking. In my recipe I am using ripe Royal Gala apples as these are naturally sweeter and you will need to add less sugar. Once baked the apple crumble is served with custard.
