Banana Cake
This is an easy banana cake recipe, baked using a loaf tin. This cake is very soft and extremely moist and fluffy. It is best to use ripe bananas. You don’t need any experience in baking to make this cake. Try it and see for yourself. This banana cake is so delicious, you would impress everyone.
Ingredients
3 ripe bananas
150g caster sugar
3 eggs
1 teaspoon vanilla extract
175g self-raising flour
1 teaspoon baking powder
175g soft margarine or butter
Icing sugar to sprinkle on top
Method
1. Pre-heat your oven to 180c /Gas mark 4. Grease a 2lb loaf tin and use baking paper.
2. I have used my Kenwood mixer but you could do the mixing by hand using a whisk.
3. Put the margarine and caster sugar in and beat until nice and creamy.
4. Add your 3 eggs and vanilla extract in.
5. Then sieve your self-raising flour and baking powder and add the flour in, mix well until well combined.
6. Mash your ripe bananas with the back of a fork.
7. Then add your bananas to the cake mix and mix well. Once all combined, pour your cake mixture into the greased loaf tin.
8. Bake in the oven for about 25 minutes.
9. Halfway of baking cover with foil and continue to bake until well done.
10. Once cooled down, sprinkle a little icing sugar on top.
