Strawberry & Vanilla Cream Cake

This is a homemade strawberry and vanilla cake that I created from scratch. The sponge is light and delicious. I have added special rainbow sprinkles to the cake mixture and the cream icing has a vanilla and strawberry flavour. For my cake decoration, I selected freshly ripe strawberries, and small heart sprinkles. This is a classic recipe for making a delicious cake to share with family and friends on a special occasion.

Strawberry and Vanilla Cream Cake

Ingredients

Sponge cake Ingredients

200g self-raising flour

110g melted butter

3 eggs

1 teaspoon baking powder

1 teaspoon vanilla extract

1 tablespoon of rainbow sprinkles

50g caster sugar

200ml milk

Decorations and frosting

Fresh sweet strawberries

150g butter

125g icing sugar

Vanilla extract

Strawberry flavour essence

Heart shaped small sprinkles

Piping bag with nozzle

20cm x 2 cake tins

Baking paper to line your cake tins

Sprinkle of your choice

Baking time 25 minutes

Preheat oven to 180C ( 160C for fan oven Gas mark 4

You can hand mix with a spoon or use your electric mixer.

Method

1. Mix all the sponge cake ingredients together for about 2-3 minutes until smooth and creamy.

2. Now pour the cake mixture into prepared cake tins.

3. Bake in the tin until for 25 minutes or until skewers inserted in the centre comes out clean.

4. Allow to cool for about 15 minutes.

5. Then decorate your cake with the strawberries, vanilla and strawberry flavoured buttercream.
