Bombay Potatoes
This recipe was requested by so many of my friends so I had to make it. Bombay potatoes is a traditional Indian side dish. This potato recipe is so delicious. It is simply boiled potatoes cooked in variety of spices and a tomato sauce, giving you a tangy spicy flavour.
Ingredients
1kg boiled new potatoes
1 teaspoon Punch puron
1/2 teaspoon Cumin seeds
1/2 teaspoon ajwain seeds
1/2 teaspoon Kalonji / black onion seeds
1/2 teaspoon Mustard seeds
4 onions sliced
Oil for cooking
50g butter
3 garlic minced
1 tablespoon ginger minced
1 tablespoon chilli powder
1/2 teaspoon turmeric powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon curry masala
2 fresh tomatoes
1/2 fresh lemon juice
4-5 fresh chillies sliced
1 tablespoon tomato purée with water
A handful of fresh coriander leaves
50ml water
Method
1. Start by peeling the potatoes and boil them until tender, and set aside.
2. In a pan poor about two tablespoons of oil and add the punch puron seeds in, stir, and then add new potatoes. Stir well then add curry powder and turmeric powder. Stir well. Set aside the potatoes ready for later.
3. In another pan pour one tablespoon of oil and add the butter. Once the butter has melted add the sliced onions, ginger, garlic, fresh chillies and tomatoes.
4. Add all the spices and tomato purée and stir well. Allow this all to caramelise for about 15 minutes.
5. Add the potatoes and stir well until the potatoes have all been coated. Garnish with fresh coriander leaves and serve with paratha, naan or basmati rice.
