Vanilla Cupcakes
Everyone loves vanilla cupcakes, this recipe is very simple. The sponge of these cupcakes are similar to a scone's crumbly consistency but they melt in the mouth, they are so soft with that vanilla taste. I have gone for a light vanilla buttercream frosting topped with a caramel sauce drizzle and half a cookie for decoration, but you can have any type of decoration you desire.
Ingredients
12 cupcakes
Bake at 160C for 25 minutes
Ingredients
250g self-raising flour
1/2 teaspoon of baking powder
A pinch of salt
70g unsalted softened butter
80g caster sugar
2 eggs
1 tablespoon vanilla extract
3 tablespoons buttermilk
Method
1. Preheat the oven to 160C and line a cupcake or muffin pan with your desired cupcake cases.
2. In your mix bowl, beat the butter and sugar together.
3. In a separate bowl combine the baking powder and self-raising flour together.
4. Now add the flour a little at a time to the butter and sugar whilst it’s mixing. Add a little buttermilk at a time, vanilla extract and the rest of the flour, eggs and mix until a batter is formed.
5. Now fill your cupcakes cases half way with your batter.
6. Place your tin into the oven and bake.
7. Once baked leave for ten minutes to cool down.
8. You can make the vanilla butter cream frosting, I have drizzled my cupcakes with a caramel sauce and topped my vanilla cupcakes with half of a cookie.
