Red Velvet Cupcakes

This is my red velvet cupcakes recipe with vanilla buttercream frosting. Normally the frosting would be made with a cream cheese. I prefer the vanilla buttercream and it goes very well with the red velvet cupcakes. These red velvet cupcakes are certainly impressive, delicious and super moist with that vibrant red colour. Just make sure you buy the quality red food colouring and don’t go for the cheap one. I have decorated my cupcakes with fresh strawberries and red velvet cake crumbs. You can of course use any cake decorations you like.

Method

This cupcake recipe is so simple to make.

1. In the food mix bowl add the flour, sugar, salt, vanilla extract, cocoa powder, eggs, butter and mix together until well combined.

2. Mix the bicarbonate of soda with the vinegar, stir well. Then pour into the cake mixture.

3. Now mix together the buttermilk and food colouring in a cup. Stir well until combined.

4. Pour this into the cake mixture, and blend together. You should see the cake mixture turn from brown to red.

5. Now pour the cake mixture into the cupcake cases. Fill half way as the cake will raise. Do not over fill.

6. Bake in the oven for 25 minutes at 180C.

7. Make your vanilla buttercream frosting by mixing the butter, vanilla and icing sugar together. Mix until the frosting is firm.

8. Once the cupcakes are baked and have cooled down, ice your cupcakes and decorate with your favourite decoration.
