Stuffed Chicken In A Tomato Marinara Sauce
This is my stuffed chicken recipe with a tomato marinara sauce - it is so simple to make. The chicken breast is seasoned and then filled with smoked ham and three different types of cheeses. You can fill your chicken with whatever you desire. The chicken is breadcrumbed, shallow fried, then oven baked with the marinara sauce topped with cheddar cheese and mozzarella. So juicy and so simple to make. I can guarantee this will be your family favourite dish.

500ml tomato passata
2 small onions
3 garlic cloves minced
1/2 teaspoon mixed herbs
1/2 teaspoon chilli powder (optional)
1/2 teaspoon black powder
1 tablespoon olive oil
4 fresh basil leaves chopped
Salt to taste
6 chicken breast meat
1-2 mozzarella pack
Cheeses of your choice
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon of black pepper
1/2 teaspoon chilli powder (optional)
Smoked ham or leave this out and add spinach (optional)
Dried basil 1/2 teaspoon
Cooking oil for shallow frying
200g Seasoned plain flour
2 eggs
Bread crumbs
Parsley and fresh basil for garnish
Method
For the Marinara Sauce
1. In a pan pour one tablespoon of olive oil and add the onions and garlic cook until sautéed.
2. Once the onions and garlic has sautéed pour in the passata and the spices and herbs stir well cover and let this simmer for at least 15 minutes. Once simmered add the fresh basil and stir well. Your sauce is now ready.
For The Chicken Breast
1. Slice the chicken but not all the way.
2. Season the chicken with the spices on both sides.
3. Fill the chicken breast with smoked ham cheese and mozzarella
For the breadcrumb
1. Season 200g flour in one plate.
2. Beat 2 eggs
3. Put some breadcrumbs in the last plate.
4. Time to breadcrumb your stuffed chicken breasts. After this process shallow fry your chicken. Do not fully fry the chicken as it will cook in the oven with the marinara sauce.
5. After frying the chicken ladle some sauce into the baking dish and place the chicken on top of the sauce, pour some sauce over the top of the chicken, and then top with your favourite cheese.
6. Oven bake for about 45 minutes covered with foil or a lid. Bake at 160. Top with parsley and fresh basil and serve with pasta. Enjoy
