Sushi
This sushi recipe is for cooked ingredients for those people who prefer not to eat raw fish. My sushi fillings are roast chicken, teriyaki salmon and surimi (crab sticks). If you prefer to use raw fish then please use it in your sushi. To make sushi is an art. I will show you my technique on how to fill and roll a sushi. There is no need to order sushi if you can make it yourself. Follow my instructions and you too could make the perfect sushi.
Ingredients
Serves 4-5
For the roast chicken
3 chicken breast meat
1/2 teaspoon black pepper
1/2 teaspoon garlic granules
1/2 teaspoon onion granules
1/2 teaspoon stock 1 tablespoon olive oil
1/2 teaspoon parsley
1/2 teaspoon chilli flakes
For the teriyaki salmon

Seaweed one pack
400g sushi rice
8 Surimi (crab sticks)
1 roasted red pepper sliced
1 ripe avocado sliced
1 teaspoon
Japanese seven spice
1 tablespoon black and white sesame seeds
Chilli sauce of your choice sriracha or sweet chilli sauce You can use soy sauce for dipping if you wish
Method
1. Put all the ingredients on the chicken breast meat and then roast the chicken in the oven. Don’t forget to cover with foil. Bake at 160c for about 45 minutes or until cooked through. Cover and let it sit. The chicken will be nice and succulent.
2. Oven bake the teriyaki salmon.
3. Cook the sushi rice until soft and sticky.
4. Once you have taken out all the ingredients it’s time to assemble your sushi.
5.On a board lay your seaweed, rough way up, on a sushi mat.
6. Put some rice on the seaweed and flatten it. You can use a back of a spoon, but I find it easier to use my hand. Beware your sushi rice can stick to your hand. My tip is wet your hand first then handle your rice.
7. Fill your favourite filling teriyaki salmon, roast chicken, surimi (crab stick) etc
8. Roll your mat with the seaweed rice filling until completely rolled and shape your sushi at the same time The sushi mat will guide you as you shape and roll your sushi.
9. Once all of the sushi has been rolled into sausage shape., it’s time to cut the sushi, making sure they are cut equally the same size.
10. Lay the sushi rolls on a plate. Serve with a chilli dip or soy sauce.
