Spicy Lamb Curry
This is an easy authentic Indian lamb curry recipe. It is so delicious and full of flavour and so easy to make. This curry is rich, creamy and aromatic and can be served with naan bread or basmati rice. Try this recipe and let me know what you think.
Ingredients
1kg lamb
2 medium white onions
2 medium red onions
2 tablespoons fresh ginger
5 garlic cloves chopped
2 large tomatoes
5 Fresh chillies optional use less or more
1 teaspoon chilli powder
Salt add to taste
1 teaspoon Garam masala
1 teaspoon Kashmiri powder
1 teaspoon turmeric powder
1 teaspoon curry powder
1 teaspoon Rosie’s spice mix (secret blend - I will reveal this in a newsletter in June. Please sign up for updates on my website Zingi.uk). You can use another teaspoon of curry powder as a substitute.
1/4 teaspoon black pepper
50mls water
1 tablespoon plain yoghurt
2 tablespoons cooking oil
1 teaspoon mustard seeds
Fresh coriander leaves to garnish
Method
1. In a clean pan pour 2 tablespoons of oil and put in your mustard seeds. Wait until it pops, then add your ginger and garlic and let this sauté until golden brown.
2. Now add your onions and let them sauté and then add your tomatoes, salt and all your spices in and give it a stir, making sure the rawness of the spices has disappeared.
3. Add your lamb and stir with all the spices together.
4. Now add your plain yoghurt and give it another stir. Pour a little water to the pan and stir again cover with a lid and let it simmer for about 50 minutes at a very low heat.
5. Add your fresh chillies if using it in the curry. Give it another stir. Then add your fresh coriander leaves.
Your lamb curry is ready to serve. Enjoy!
