Aloo Gobi Masala

This recipe is a vegetarian Indian - Punjabi delicacy. It is a delicious side dish and will go well with naan bread, chapatis, and parathas. This recipe is a very easy to make and it is full of flavour but not too spicy.

Aloo Gobi Masala

Ingredients

2 medium onions

3 shallots

2 fresh chillies

2-3 bay leaves

3 cloves garlic chopped

1 teaspoon tomato purée

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon Kashmiri powder

1 teaspoon mild curry powder

1/2 teaspoon Ajwain seeds

1 teaspoon coriander powder

1/2 teaspoon Kalonji seeds (Nigella seeds)

250g cauliflower

250g potatoes

1/2 red pepper

Handful of fresh coriander leaves

1 tomato chopped

Salt to taste

Butter optional

1 tablespoon cooking oil (not olive oil)

Method

1. In a pan put your potatoes and cauliflower in and pour some water and let this cook, this would speed up the cooking process of this curry. Once cooked set aside, to add in later.

2. In a separate pan heat it up and pour the oil and the butter, and let this heat up.

3. Add your cumin seeds, onions, garlic, shallots, fresh chillies, red pepper, bay leaves tomatoes and tomato purée and give this a stir cook until soft and golden brown.

4. Now add your salt and all the other spices into the pan and give it a good stir, pour a little water to the pan and give it another stir.

5. Now add your cooked cauliflower and potatoes into the pan and give it another stir until the spices has coated the potatoes and cauliflower and let it simmer for about 10-15 minutes.

6. Add your fresh coriander leave and give this another stir.

Your aloo gobi is ready to serve, I have served mine with dosa which is a South Indian savoury, crispy pancake made with rice and urid dal.
