Chinese Roasted Char Siu Pork
Char siu originally comes from Cantonese cuisine and means fork roasted over a fire. The pork is then finished baking in the oven until tender and cooked through. Char siu pork is normally braised. It is extremely moist, savoury and sweet. You can put char sui pork into noodles or serve with steamed rice, it’s up to you. Here is my easy recipe.
Ingredients
1kg pork
5 tb honey
3 tb light soy sauce
2 tb Shaohsing rice cooking wine
1 tbs garlic chilli sauce
2 tbs oyster sauce
2 tbs hoisin sauce
1 teaspoon Chinese five spice powder
1 tbs dark soy sauce
2 tbs oil
A little soy bean curd (for colour)or
1 teaspoon red yeast rice powder (for colour)
1 teaspoon paprika
2 tbs light brown sugar
1 tbs cornflour
1/2 salt
Adjust the recipe to your amount of pork used and adjust to your taste
Method
1. In a clean bowl put the pork and add all the ingredients and mix together, make sure the pork is well covered.
2. Let it marinate overnight.
3. Prepare the baking tray with foil and oil.
4. Place the pork cover with foil then oven bake for 2 hours 45mins at gas mark 3 or 160C.
5. In a pan put the char siu marinade in and let it boil then add your cornflour, keep stirring until smooth and creamy. Use this sauce to moisten the pork once taken out from the oven. This will keep the pork juicy. Once baked leave covered so the pork is extra juicy when sliced to serve.
