Sweet Chilli Chicken Pizza & Barbecue Chicken Pizza
This is my recipe for the most delicious sweet chilli chicken pizza, and if you are a fan of barbecue chicken then you will definitely like my barbecue pizza. Everything is made from scratch, from the taste of the sweet chilli chicken to the tangy taste of the barbecue chicken, to the easy fluffy but crusty pizza dough giving you that amazing taste. I honestly have to say this pizza is better then takeaway pizza. Don’t take my word for it, try it yourself and see. You’ll be surprised and of course you can choose your own topping.
Ingredients - sweet chilli chicken topping
2 large chicken breast meat
3 medium onions
6 cloves garlic
1/2 teaspoon mixed herbs (and a bit more to sprinkle on the pizza)
1 tablespoon tomato purée
250ml tomato passata (+ 150 ml for spreading on the dough)
Handful of fresh Basil
Salt to taste
1/2 teaspoon salt
1/2 black pepper
1 teaspoon garlic granules
150g mushrooms
50g red pepper
50G yellow pepper
2 medium fresh tomatoes
2 pickles chilli
100g cheese
100g Mozzarella cheese
1 teaspoon chilli powder
1 teaspoon sugar
Olive oil for frying the onions and drizzling over the pizza traysMethod
Ingredients - barbecue chicken topping
2 large chicken breast meat
1 heaped teaspoon smoked paprika
1 tablespoon soy sauce
1 tablespoon honey
1/2 teaspoon salt
Ingredients - pizza dough
1 tablespoon olive oil
1 teaspoon sugar
7g Yeast
1/2 salt
600g white bread flour (can use self-raising flour)
300mls lukewarm water
1 1/2 Polenta
1 teaspoon mixed herbs (for sprinkling over the top of the pizza)
Method
Sweet chilli chicken
1. In a clean pan pour some olive oil and put in the onions and garlic stir well until translucent golden brown.
2. In a separate frying pan add olive oil and fry the mushrooms, then set aside.
3. Add the chicken and cook with the translucent golden brown onions, once cooked halfway add the salt, black pepper and garlic granules and give it a good stir and then add the mixed herbs and tomato purée, give it another stir, then add the tomato passata, stirring it well.
4. Simmer for about 10 minutes then add the fresh basil stirring well then add the chilli powder and sugar, stir well until cooked, and set aside. Let it cool down ready for the pizza topping.
Barbecue chicken
1. 2 large chicken breast meat cut into cubes, add the smoked paprika, soy sauce, honey and salt and marinate for 15 minutes.
2. In a clean pan pour some olive oil then put your marinated chicken and cover and cook. The liquid will increase once covered and because of the honey the sauce will become creamy do not add any water at this point.
3. Once the chicken is well cooked and the sauce has thickened it is now ready, set aside for the barbecue topping.
Pizza Dough
1. In a measuring jug of lukewarm water, add the yeast and sugar, set aside for 10 minutes.
2. In a clean bowl put the flour olive oil and pour the lukewarm yeast water mixture to the flour and knead well until it forms a dough, add a little olive oil before covering with a tea towel.
3. Set aside for 25 minutes
4. Roll out the pizza dough add the tomato passata, chicken and add your favourite topping.
5. I used two pizza trays, lined with foil and sprinkled with Polenta and drizzle olive oil before putting the pizza dough on top of the two pizza trays.
6. Make sure you sprinkle a little mixed herbs over your pizza before baking it in the oven.
Bake in the oven at 160 C(fan) or Gas Mark 4 for 25 minutes.
Once ready sprinkle with fresh basil leaves, serve with French fries and salad. I also served it with my homemade garlic sauce.
