Paneer Tikka Masala
This is my favourite Indian vegetarian recipe, it is very easy to make. I have used my ground masala spices and whole spices to give you a flavourful and delicious dish. The curry is tangy with the tomato but so creamy. The paneer is slightly fried but not over cooked to give it a soft but not rubbery texture. The paneer and the creamy curry will melt in the mouth. You can serve this curry with anything you like, I have chosen my homemade naan bread.
Ingredients
Serves five to six people
500g Paneer
1 teaspoon red chilli powder
1 teaspoon Turmeric powder
Salt
Oil (not olive oil)
Red and yellow peppers
1-2 teaspoon Cumin seeds
3-4 Cloves
2 pieces of Cinnamon
2-3 Dry red chilli
1/2 teaspoon Asafoetida
2 Green Cardamom
2 Bay leaves
5 onions
2 tablespoons ginger
1 tablespoon Kashmiri red chilli powder
1 tablespoon Coriander powder
1/2 Cumin powder
1 tablespoon Garam Masala
1 Teaspoon Turmeric powder
400g tin tomatoes
3-4 tablespoons single cream
3-4 chopped green and red fresh chillies
1 teaspoon Fenugreek dried leaves
Handful of fresh coriander leaves
Method
1. Cut the paneer into cubes.
2. In a bowl place your cubed paneer and add your salt, chilli powder and turmeric powder and marinate for 25 minutes.
3. Once the paneer has been marinated fry your paneer in a little oil. Once cooked remove and set aside.
4. Clean your pan and add a little oil to your pan and fry your peppers.
5. Once cooked through remove and set aside with your paneer.
6. In a clean pan add a little oil. Time to add your whole spices slightly fry them in oil. This would bring out the flavour.
7. Add a little butter and the add your ginger, fry your ginger until golden brown, then add your onions and fry until translucent and soft.
8. Make a hole in the middle of your pan, and add your ground spices asafoetida powder, cumin, garam masala, coriander, Kashmiri powder and turmeric powder.
9. Mix the spices all together allowing the spices to roast.
10. Once the spices have been roasted then add your tin tomatoes and stir well.
11. Add your Fresh chillies at this point and stir well.
12. Now add your cooked paneer and peppers, and mix together.
13. Sprinkle your fenugreek leaves and mix well.
14. Add your spoonful of single cream, and garnish with fresh coriander leaves.
I have served my paneer tikka masala, with my homemade naan bread. You can eat this with basmati rice too.
