Chicken Chow Mein
I am making stir fry Chicken Chow Mein today. I have used chicken and vegetables - you can vary the amount to suit your taste. I have combined a number of sauces to give you that authentic taste. The recipe is easy to follow for both beginners and experienced cooks.
Ingredients
350g egg noodles
450g chicken breast (thinly sliced)
1/2 teaspoon black pepper
1/2 teaspoon five spice powder
1 to 2 tablespoons dark soy sauce
3 to 4 small onions sliced
2 spring onions (1 for garnish)
3-4 cloves of garlic sliced thinly
2 tablespoons fresh ginger
Vegetables for stir fry of your choice ready made or sliced
2 tablespoons of cooking oil (not olive oil)
Ingredients for the sauce
2 tablespoons oyster sauce
1 tablespoon dark soy sauce
1/2 teaspoon of sugar
A little salt (remember soy sauce is salty)
1 tablespoon chilli sauce of your choice
1 tablespoon rice vinegar
Method
1. Boil water then add the noodles, once cooked, drain and dry.
2. Slice chicken and marinate with black pepper and five spice powder, soy sauce. Marinate for about 20 minutes.
3. Take out a clean wok or a pan, heat up.
4. Add some oil to the hot wok, then fry the marinated chicken, stir fry until cooked. Then set aside.
5. Clean the wok then heat the wok on the gas. Once the wok is hot add some oil.
6. Add your ginger, garlic and onions and stir fry until the onions are translucent.
7. Add your mixed vegetables and stir fry. Once the vegetables are cooked remove from the wok.
8. Now add your noodles and chicken in the wok and stir fry together with the sauce. Once all combined together add all your vegetables together.
9. Finally garnish with spring onions and serve.
