Filipino Pancit
Pancit is a Filipino noodle recipe, using rice noodles. This noodle dish is so delicious, and so easy to make. You can add chicken, pork, prawns or a mixture of both. You can also use a variety of fresh vegetables as much or as little as you like. The flavour is in the seasoning and the stock used, and don’t forget the fresh lemons. I was inspired to make this noodle dish because of my good friends Albert and his wife, Jocelyn, who shared their Pancit with me one day. I won’t forget their kindness and how delicious it tasted. Thank you Albert and Jocelyn. Now I am going to teach you my version of the Filipino Pancit which is just as delicious.
Ingredients
Serves 5-6
2 packets of rice noodles
150g baby sweetcorn chopped
5 spring onions sliced
2 mixed peppers sliced
100g sugar snap peas
250g mixed vegetables sliced
250g turkey / chicken / pork - your choice
Crab meat optional
1 1/2 teaspoon salt
1 teaspoon onion granules
1 teaspoon garlic granules
1 teaspoon paprika powder
5 garlic cloves chopped
1-2 teaspoon black pepper
1 tablespoon fish sauce
1 tablespoon soy sauce
Fresh lemon juice
Fresh lemon sliced for garnish
Fresh whole chillies sliced for garnish
500mls boiling hot water
2 stock cubes
Cooking oil
50ml water for steam cooking the vegetables in the wok
Method
1. Prepare all the vegetables, meat and other ingredients.
2. Add a pinch of salt, black pepper garlic granules and a pinch of onion granules to your tiger prawns and set aside.
3. Add soy sauce, pinch of paprika and garlic and onion granules to your meat and set aside.
4. In a hot wok add oil and fry the onions until translucent, then add the garlic and chilli and fry well.
5. Add all the vegetables and cook but don’t over cook the vegetables to give it a slight crunch. Once cooked remove the vegetables from the wok.
6. In your clean wok add oil and fry the meat until cooked.
7. Do the same for the prawns but do not over cook the prawns, otherwise they can turn rubbery.
8. During your cooking process season throughout the vegetables, meat and prawns. This will bring out the flavour to your rice noodles.
9. In a pan pour the stock and boil. Put in the rice noodles and pour a bit more boiling water from the kettle. Let the noodles cook.
10. Once cooked remove the noodles and cook to dry out your noodles. Making sure you do not burn the noodles. Put all the vegetables, prawns and meat with the seasoning and mix well. Squeeze lemon juice and mix well.
Your noodles are done. Serve with chicken wings and prawn crackers and don’t forget to have a few lemon wedges on your plate. So delicious! Give it a go and let me know what you think.
