Salmon Curry & Stir-fry Rice

Here is a simple, but extremely easy recipe to spice up your salmon. I have used whole roasted spices for this curry and lots of tomatoes to give it a sweet but tangy taste. This is my favourite salmon curry recipe, which I want to share with you all. Please try it out, I can honestly say once you have tried this recipe it will be your favourite too.

Salmon Curry & Stir-fry Rice

Ingredients

1 kg salmon fillet (serves 6 to 7)

4 onions sliced

6 garlic cloves minced

5cm ginger grated

4 fresh chillies chopped (optional can leave it out if you don’t like chillies or de-seed and chop)

400g Passata

1 tablespoon tomato purée

1 large fresh tomato sliced

Some fresh coriander leaves

Spice mix for the salmon marination

1 1/2 teaspoon salt

1 teaspoon black pepper corns

1 teaspoon coriander seeds

1 teaspoon chilli powder

1/2 teaspoon garam masala

1 teaspoon cumin seeds

1 teaspoon lovage seeds

1/2 teaspoon chilli flakes

1 teaspoon turmeric powder

2 tablespoons cooking oil and more oil for cooking

50g butter

Method

1. Wash the salmon and cut it into to large square chucks and place into a clean bowl. Put ginger and garlic, all the whole spice seeds and the turmeric into the salmon and mix well and leave to marinate for 1 hour in the fridge.

2. Fry the onions garlic in a frying pan once golden brown; take out and set aside.

3. Pour 2 tablespoons oil in the pan and now add your spiced marinated salmon and fry the fish.

4. Add the fresh chillies (if adding)and add your fried onions at this point.

5. Stir well then add the tomato passata, tomato purée and fresh tomatoes.

6. Cover and cook for 15 minutes at low gas, then give it another stir. Add the fresh coriander and give it another stir, then garnish with more coriander leaves. Your salmon curry is ready to serve with your stir fry rice.

Stir-fry Rice Recipe

You will need ready made 500g rice cooked previously for this stir fry recipe.

1. In a pan pour about 1 tablespoon of oil and add your eggs and lightly scramble your eggs and set aside.

2. Add a little more oil and fry the garlic. Don’t burn the garlic! Once lightly golden set aside.

3. Now add a little butter and fry the onions and spring onions sauté until golden now add the mixed vegetables of your choice in and cook.

4. Added the rice, I have used saffron in my rice to give it a yellow colour but you can use turmeric powder if you wish. Give this all a stir adding the garlic in too.

5. Now add 1/2 teaspoon of chilli flakes, 1 teaspoon of soy sauce, 1/2 teaspoon of salt, 1/2 teaspoon black pepper, and 1/2 teaspoon garlic powder and give this all a good stir.

6. Now add your scrambled eggs and mix together with the stir fry rice. Garnish with some cut spring onions. Your rice it ready to serve with your salmon curry.
