Chicken and Vegetable Balti

This is a popular and most requested curry dish. I have added vegetables to this curry giving it texture, colour, and most importantly making it healthy. I have also used my spices to give it that authentic Balti taste.

Chicken and Vegetable Balti

Ingredients

1/2 red pepper

1 large carrot

2 medium potatoes

2 large onions

2 medium tomatoes

500g chicken

1 tablespoon ginger

4 green chillies

1 1/2 handful Coriander leaves

5 garlic cloves

1 teaspoon Cumin seeds

1 teaspoon Kashmiri chilli powder

1 teaspoon Garam Masala

1 tablespoon curry powder

Salt to taste

1 teaspoon Fenugreek leaves

4 to 5 Bay leaves

A little water

Cooking oil (Not olive oil)

Method

1. Heat a pan and pour cooking oil.

2. Add onions and garlic and cook until translucent and slightly golden brown.

3. In a separate pan cook your potatoes and carrots until soft but not over cooked. Drain your potatoes and carrots and set aside.

4. Now add ginger to the onions and garlic; once the ginger is cooked through, add your tomatoes. Let this cook, stirring it from time to time.

5. Add your chicken to the pan. Stir, add some salt and red peppers and stir it again.

6. Add curry powder, Garam Masala, Kashmiri chilli powder and cumin seeds.

7. Give this all a good stir, add a little water at this stage.

8. Cover and let it simmer for least for 15 minutes.

9. After 15 minutes stir and add your cooked potatoes and carrots into the curry.

10. Give it another stir gently without mashing your potatoes or carrots.

11. Add your fresh chillies, fenugreek leaves, bay leaves and fresh coriander leaves. Give this all a good stir, cover and let it simmer for 10 minutes.

12. After simmering for 10 minutes give it a final stir and garnish with a some more of fresh coriander leaves. Serve with basmati rice, naan bread vegetables salad of your choice and enjoy.
