Chicken Jalfrezi
If you love Indian curries then you will love my authentic Chicken Jalfrezi recipe. This recipe is very popular in India It is requested in the UK in restaurants everywhere. Now, I’m going to teach you to cook this easy curry at home, using my fragrant spices. Normally a Jalfrezi is a hot curry but you can adjust to the amount of fresh chillies you want to use. This curry is delicious and it is served well with naan bread or basmati rice.
Ingredients
500g chicken breast meat
3 medium onions
5 garlic cloves
1 tomato
1/2 red pepper
1/2 green pepper
1 tablespoon ginger
1 red fresh chillies
1 green fresh chillies
1 teaspoon Kashmiri powder
1 tablespoon soy sauce
1 teaspoon cumin seeds
1/2 teas of cardamom seeds
1 teaspoon coriander
1/2 black pepper
1/2 turmeric powder
Fenugreek leaves 1 teaspoon
1 tablespoon curry powder
Fresh coriander leaves handful (for garnish)
1 tablespoon tomato purée
70g butter
Salt
Method
1. Prepare your chicken by adding soy sauce and marinate for about 10 minutes.
2. In a clean dry pan, pour about 2 tablespoons of oil. Once the oil is hot add your fresh ginger fry until golden brown.
3. Now add your butter and add your onions and garlic and give this a good stir cook until golden brown.
4. Add your chicken and give it stir until onion garlic and ginger has all combined, cover with a lid for about 15 minutes.
5. Remove the lid and add your salt, tomato, red and green peppers and give this all a good stir.
6. Cover with a lid and let it simmer for about 15 minutes.
7. After 15 minutes add all your spices and tomato purée, give this a good stir and cover with a lid and let this simmer on a low gas for another 15 minutes stirring time to time. Once the chicken jalfrezi is cooked serve with anything of your choice.
