Malaysian Mee Goreng
This is my variation of the Malaysian Mee Goreng noodles. This noodle recipe is another quick and easy one, and is full of flavour. Mee Goreng mean fried noodles. This egg noodle recipe is very different from the Chinese noodle recipe Chow Mien. I have used sweet soy sauce, Kecap Manis, to give the noodles a rich flavour and I have used Sambar Oelek to give you a spicy flavour. You could. of course. use sriracha sauce if you wish. Follow my recipe for this mouthwatering Malaysian Mee Goreng and you won’t be disappointed.
Ingredients
Serves 4-5
340g egg noodles
300g bean sprouts
250g chicken breast meat
240g raw king prawns
4 spring onions
3 fresh green chillies
150g choi sum
3 medium onions
2 eggs
100g pak choi
3 garlic minced
1 tablespoon tomato sauce
1 spring onion for garnish
1 red chillies for garnish
1 teaspoon light soy sauce
1 tablespoon sambal oelek
1 tablespoon oyster sauce
1 tablespoon Kecap Manis (sweet soy sauce)
1 teaspoon shrimp paste (Nang Fah)
1/2 teaspoon black pepper
1/2 teaspoon chilli powder
1/2 teaspoon onion granules
1/2 teaspoon garlic granules
1/2 lemon sliced
Oil for cooking (not olive oil)
Method
1. In a hot wok pour a little oil start frying the chicken. Season with chilli powder garlic granules, onion granules and black pepper. Allow to cook.
2. Separate the chicken in the wok and add the king prawns. Season and allow to cook. Do not over cook the prawns.
3. Once cooked through set aside in a plate for later.
4. There is no need to wash your wok. Continue to cook in the wok by adding a bit more oil and add the onions, chilies, spring onions and garlic and stir-fry.
5. Once the onions are translucent add the vegetables and stir-fry.
6. In a bowl mix all the sauces together until well combined. Set aside.
7. Now add the egg noodles to the wok and the chicken and prawns. Mix all together.
8. Now pour the sauce to the noodles, and stir-fry the noodles until well coated.
9. Make the omelette in a frying pan, once cooked slice up, then garnish your noodles with red chillies and spring onions.
