Peri Peri Chicken
If you like Nando’s Peri Peri chicken then you will like my variation of Peri Peri chicken. This recipe has a variety of herbs and spices making it flavourful and so easy to make at home. My Peri Peri chicken is definitely a treat served with French fries, salad and of course don’t forget the Peri Peri sauce. It’s so delicious.
Ingredients
1kg chicken legs
1 teaspoon thyme
1 teaspoon oregano
2 teaspoon paprika
1 teaspoon black pepper
5 garlic cloves
1 teaspoon salt
Handful of coriander leaves
1 fresh lemon juiced
50mls red wine vinegar
20mls olive oil (extra olive oil for drizzling on the baking tray)
5 red and green fresh chillies
1/2 red pepper
2 shallots
Method
1. Wash the chicken legs and cut some slits on them, then place them into a clean bowl.
2. Put all the other ingredients into a clean blender, and blend until puréed.
3. Pour the puréed mixture into the bowl of chicken legs, and mix well. Add the fresh coriander leaves and mix well.
4. Marinate the chicken over night.
5. Once the chicken has been marinated over night place the pieces of chicken onto a foiled baking try and drizzle with olive oil.
6. Place into the oven at 180C (fan) or Gas Mark 6 for at 60 minutes making sure you turn the chicken after 30 minutes. About 15 minutes before the chicken is cooked uncover the chicken to allow it to brown. Once the chicken is cooked through serve with French fries, salad and sauce.
